Veganism is a growing movement, worldwide. The global vegan food market size was valued at USD 16.55 billion in 2022 and is expected to grow rapidly between 2023 and 2030. Vegan options can be healthier, more sustainable, and in the current market, more desirable. So, it’s no surprise that more and more chefs are catering to the Vegan movement.

We asked our Malvern Head Chef, Marius, about Veganism and how it’s changed things in his kitchen. He said

“We have to adapt to the customers’ needs. It is a challenge for chefs, of course. But we can create a wide range of dishes once we become aware of the wide range of Vegan ingredients available. Searching out new ingredients and training the team on how to incorporate them is one of my passions.”

Marius has already made a vast number of changes in order to accommodate Vegan diets. These include:

• A clean, designated corner for preparing Vegan dishes.

• All coded, sterilized equipment for Vegan dishes only.

• Learning new cooking methods and ingredients suitable for Vegan meals.

• Training of all junior staff in these new ingredients and methods.

As Vegan cuisine moves forward, we expect to offer an ever-expanding range of variants to choose from. As always, we’re committed to the best in fresh, local dining at Aldwyn's at Ellerslie and all of our restaurants. Our use of seasonal British produce will evolve along with the expectations of our diners.
